It’s All About Tomatoes!


Chef Matt Annand recently spent a little time celebrating ‘All Things Tomato’ at Landsburg Nursery in Brainerd Minnesota.  Speaking to an engaged crowd, Matt offered up a tasty cooking demonstration, salsas, and with the help of the mad skills of Prairie Bay’s Bartender Dave Michael – the freshest tastiest Bloody Mary of this upcoming season (you know where you can get one!  ;P)


Attendees had the opportunity to ask questions, take notes.. and a little tasting.  You never know where our 3 Cheers Staff will show up next.


As promised, here are the recipes Matt demonstrated:

Sun-Dried Tomato Jam

½ pound of sun-dried tomatoes- soften by boiling for 5 minutes in water(save water)

2 bulbs of roasted garlic

½ of an onion caramelized

1/3 cup honey(sub sugar)

1/3 cup sambal(sub sriracha, Tobasco …)

1 tbs. salt

½ red bell pepper roasted

Puree in food processor

While it’s running, drizzle in ¾ cup extra virgin olive oil

Add the saved boiling water for the consistency needed

Smoked Tomato Coulis

¼ onion diced

5 cloves of raw garlic chopped

¾ cup extra virgin olive oil plus extra for sautéing

1 cup of white wine

small can of smoked tomatoes

½ tbs. salt

Pinch of cayenne

½ of the juice from the can

Sauté the onion and garlic in olive oil until translucent

Add in the white wine and reduce

Add the small can of smoked tomatoes

Mix in salt and cayenne

Put everything in a blender

While mixing in the blender, drizzle the ¾ cup of olive oil
